Freekeh, fire-dried green wheat, cooked with pearl onions and stock, seen from above. The grain is being hailed as a "paleo" "superfood" by health gurus. It has a lower glycemic index than most grains and is high in fibre (three times as much as brown rice), protein and minerals. One of man's oldest cereal foods, it is still popular in the middle east.
