Vanilla is the world's second most-expensive spice (after saffron), and Madagascar is famed for producing the best-tasting vanilla, known as Bourbon vanilla. Although it is commonly used in desserts and cakes, in the restaurants of Antananarivo it can also be found in savory dishes and in a plethora of other products, such as soap, shampoo and perfume.
