Idiazábal cheese productor in Ondarre, Goierri, Basque Highlands Basque Country, Euskadi Spain. To make Idiazabal Cheese, the milk of the Latxa and Carranzana sheep is used. The latxa sheep is found in the provinces of Gipuzkoa, Araba and Bizkaia and in the northern area of Navarra. On the route, which technically bears the name of a long-distance trail, the GR283, the Idiazábal Cheese Route crosses the landscapes of Aralar and Aizkorri-Aratz where the Latxa sheep live, whose milk is used to make this delicacy loved by cheeselovers and, of course, the town from which it takes its name, Idiazábal.
