Evaporated milk has been put through the following process: Goodmilk is taken. Some of the fat is taken from it. The milk is heated almost tothe boiling point. It is evaporated about one hour at a temperature of 140° ina vacuum pan. The temperature is then raised almost to the boiling pointand the product is canned. It contains 68 parts of water instead of 88 asin the case of fresh milk. By condensed milk is meant what is often spoken of as sweetened con-densed milk. The process is the same as for evaporated milk except thatthe temperature is not raised at the end of the evaporating process. Enoughcane sugar is added to make the mixture 40 per cent sugar.
