Havingmany new subscribers this year, we republish the col-lection, with the addition of many new ones, which willbe found very valuable. OBSERVATIONS ON PRESERVING. A very common discovery made by those who pre-serve fruits, etc., is, that the preserve either ferments,grows mouldy, or becomes candied. These three effects arise from three separate first from insufficient boiling ; the second from beingkept in a damp place, assisted in some degree by the firstcause ; and the third from being too quick and too longboiling. Preserves of all kinds should be kept entirely secludedfrom the air, and in a dry place. In ranging them onthe shelves of a store-closet, they should not be sufferedto come in contact with the wall.
