Culture.—Sow in spring, in drills eighteen inches apart, in a rich soil, and keep the flower-stems cut off as they appear. It remains in the ground year after year, and only needs to be taken up and divided once in four or five years. To be cut and cooked precisely like Spinach ; or it is excellent cooked with it, one-third Sorrel to two-thirds Spinach. Very nice to be eaten after it has become cool.
