British Razor Clams prepared for eating
Fresh Razor Clams make excellent eating and are very easy to prepare. Wash thoroughly in fresh running water and pat dry. Heat a large frying pan with a little olive oil and place the razor clams in, hinge-side down. Cook until the shells open up (approximately 1 minute) then turn and cook with the meat side for another minute. Season and serve with a wedge of lemon and any remaining pan juices.
