Storage jars for olive oil in the remains of a house in Bulla Regia, Tunisia. During the reign of emporer Marcus Aurelius in the second century AD, the colony of Sufetula (modern-day Sbeitla or Subaytilah in Tunisia) was one of the major olive producing regions, and by the fourth century AD it was the biggest exporter of olive oil in the Roman world. At that time olive oil was considered inferior to other oils and was used in lamps. These stone containers may have been stored underground. Bulla Regia is unique as the place that Romans built underground to escape the heat.
