When some are eight inches high, and fine stocky plants, set them in trenches. Earth up a little during summer, keeping the leaf stocks close together, so that soil cannot get between them. Finish earthing up in autumn, and never hoe or earth up in moist weather, nor when the plants are moistened with dew. To preserve celery for winter, dig trenches a foot in width and as deep as the tops of the plants. Stand the celery in these erect as they grow with what dirt adheres to the roots, packing close- ly but not crowding. After the trench is filled it should be covered with straw or leaves, as a protec- tion from frost. Do not cover until the weather becomes quite cold and then only a little at a time, as the cold becomes greater. Celery will bear a good deal of frost. The trench must have a good drainage. The celery is an article that has now become almost a universal standard in the list of vegetables. Hundreds of car loads are shipped from Michigan each year with an ever increasing demand.
