This is done by the leaves together into the hand and tying with yarn or bass, to the light and air from the inner leaves, which must be done when quite dry, or they will rot; in three or four weeks they will be sufficiently blanched. At the approach of winter the growing crop may be taken up carefully, with a ball of earth to each plant, and planted close together in a frame or dry cellar, when it can be used during the winter prepared and dressed like a salad.
