A German sausage being given a dollop of mustard at one of the original Thuringian sausage stalls on Alexanderplatz in central Berlin, Germany. The Thuringer Rostbratwurst (short: Roster), is a unique sausage from the east German state of Thuringia where it has been the traditional delicacy for hundreds of years. The oldest known recipe dates from 1613 and is kept in the State Archive in Weimar. Another is recorded and published in 1797 in the "Thüringisch-Erfurtische Kochbuch" (cookbook) which also mentions a smoked variety. The preferred preparation method for Thuringian sausage is roasted over charcoal or on a grill rubbed with bacon and served in a cut-open roll
