It is filleted, and dried in the winter wind and sun without the use of salt on the Hjell. The Stockfish is an important ingredient of Norwegian cuisine and is Norway’s oldest export. Local industries produce cod liver oil and fertilizer manufacturing. The Lofoten islands stretch out into the North Atlantic Ocean above the Arctic Circle on the west coast. The region is known for its dramatic and picturesque scenery, very popular with tourism for its high peaks, fjords and numerous small fishing villages with dark red
