Acai is a palm, Euterpe oleracea, whose fruit is used primarily as a staple food. The fruit's thin skin is pasteurised and processed to make a liquid that is sold in thin, medium or thick consistency. Its shelf-life in this way is short - just one day. In recent years the fruit has been commercialised by dry-freezing for use in energy drinks and used in soaps and cosmetics.
