Saffron / Crocus sativus flowers growing - sud-Touraine, France.


Saffron is the most costly culinary product in the world, only coming from the Crocus sativus plant which produce only three stamens each. One kilo weight of the spice requires between 120,000 and 150,000 flower heads to produce such a quantity of a labour which also takes between 400 and 450 hours by hand. On drying the stamens lose 80% of their volume. Records show that Saffron fairs were first held in Preuilly-sur-Claise at the beginning of the 17th century on the day of Saint Luc, 17th February.
