A head of "Purple Cape", an overwintering variety of cauliflower, is ready to harvest in a backyard food garden in early spring (British Columbia).


"Purple Cape" is a popular overwintering variety of cauliflower that is planted in summer and harvested the following spring. The purple colour is caused by the presence of anthocyanins, water-soluble pigments found in various other plants as well, such as red cabbage and purple grapes.
