It is said that milk does not quench thirst like water. It is more victuals than drink. Cream is 15 per cent, lighter than the milk. This is why it rises to the surface. Condetised milk, in proportion to uncondensed, is one to four. The water is driven out and the solids retained. By adding water it is milk again, though not exactly as it comes from the cow. Boiling milk makes it more easily digested. It will also kill the germs which may cause purging. Leaving the milk in the stable till it gets cold makes less cream.
