VEGETABLE SEEDS An Exceptionally Useful Vegetable: Chinese Cabbage, Pe-Tsai, or Celery Cabbage Although cultivated in the Orient for centuries, it has only been during the last few years that this remarkable vegetable has found recognition here as being worthy of cultivation in every home garden. Pe-Tsai really belongs to the mustard rather than the Cabbage family, although both are first cousins. This is the reason for its far superior flavor when compared with our regular Cab- bage. Pe-Tsai is equally palatable cooked or raw as a salad. Its tenderness and mild flavor make it particularly appetizing. It may also be made to form two distinct dishes by serving the leaves like lettuce and the stalks like celery. In upright habit of growth, it resembles the Cos Lettuces more than the Cabbages. The leaves are of a very appetizing bright yellowish green color, more like celery than Cabbage. The seeds are generally sown from July to September, in rows 2 feet apart and covered about 34inch, deeper in light and less in heavy soils.
