Red pepper in a mortar that has been hand ground, to use for dipping the naan bread dough in prior to baking. The flattened bread dough is frequently brushed with olive oil, spices and herbs. To hand grind the red pepper, first, you toast the peppers before grinding. Second, chop them up before starting to grind doesn't hurt.
