MODEL RELEASED. Cheese production. Worker taking a sample from rennet-treated milk. The milk is being left to curdle. As it curdles, the curd, solid part, separates from the whey, liquid part. Once fully separated the curd is drained, salted, moulded and matured to form the cheese.
