Boiling the pomace in the sul-phuric acid does not affect its value for later operations, and, as a matterof fact, some of the cellulose is converted into grape sugar, increasing, ifanything, the quantity of grape spirit which may be obtained liquor in the tubs which contains most of the free tartaric acid isdrained from the pomace and the pomace itself is thoroughly liquor then goes into other tubs lined with sheet-lead.
