Then lift off each single oysterwith a flat knife, pour beaten egg over it, cover with fine breadcrumbs, and work the Villeroi sauce and crumbs around the un-der side of each oyster until entirely covered. When all are done,put basket and fry in hot fat to a nice golden with Bechamel or Villeroi sauce, diluted with the oysterliquor. Garnish with mushrooms or sliced truffles.
