The head of a monkfish, or anglerfish, Lophius piscatorius, that was caught trawling in the English Channel. The cheeks have been removed for cooking and the head has been placed in a saucepan to be boiled for fish stock so none of the fish is wasted. There is some confusion over the names monkfish and anglerfish. Originally monkfish referred to the angel shark, Squatina squatina, however, anglerfish are now commonly referred to as monkfish.
