The Sarsify is a hardy biennial plant, and is principally cultivated for its roots, which ari, long and tapering, and, when grown in good soil, measure twelve or fourteen inches ij length. It is considered wholesome and nutritious. When cooked, the flavor resemble' tliat of the oyster, and is a good substitute for it: whence the popular name. Culture and treatment similar to Parsnip.
