This should prove an invaluable hint to the house-keeper who want to use home grown, damaged or frozen eggs in the manufacture of custards, custard pies and other delicacies. Even the very bad and absolutely rotten eggs find a market, a considerable portion of them being saved. According to reliable data it has been estimated that many of the larger dealers in eggs are able to get from $25 to §50 a year for absolutely rotten eggs. These eggs are put through a special clarifying process and the good parts sepa- rated, and these ultimately in the hands of the baker are turned into various edibles that are said to delight the hungry stomach. Such parts as are too far gone to give good results in the clarifying process are largely utilized in the manufacture of mucilage, and to some extent in other branches of the dif- ferent arts and mechanical pursuits. WINTER. EGGS PAY BIGGEST PROFITS By referring to the tables it will be noted that the time of best prices for fresh eggs is from the first of September until about the middle of March, while the lowest prices are usually reached during April and May. These facts make it evident that the best profits will be obtained by those able to produce economically the greatest number of winter eggs. maturity in five or six mOnths, but the egg farmer cannot afford to rely upon this rule.
