Full story here: Watercress farmers are gearing up for one of the busiest weeks of their year as harvesting of the new season of British watercress begins. Unlike other crops whose progress has been delayed by the erratic and unseasonably cold spring weather, watercress has been thriving because it is grown in flowing spring water at a constant temperature of 11c which protects it from the frost and cold. On a cold day steam can be seen rising from the beds as the warmer spring water meets the cold air and the watercress retreats close to the water surface to keep warm.
