Skin dark green, flesh pure white; of ex- cellent qualitv for slicing, and when young, make attractive pickles. Oz., 10c; 2 oz., 15c; % lb., 25c. West India Gherkin. — (True)—Also known as Jerusalem Pickle. Very small, oval shaped, prickly fruits. Used exclusively for pickling. Packet, oc; oz., 2oc. BECIPE FOR PICKLING CUCUMBERS. Make a brine of one-third of a pint of salt, and four pints of water. Drop as many cucumbers in the brine as it will cover, in which lec them remain forty-eight hours; drain the brine off, place them in a porcelain kettle, cover with vinegar (good cider vinegar, only the moderate strong). Let the vinegar come to the boil- ing point very slowly, then pack the pickles in glass jars, pour the hot vinegar over them, and seal up air tight. BOKCECOLE, OR KALE. Sow from three to four pounds to the acre. The Kale makes excellent greens for winter and spring use ; they are hardy, and sown in September in drills or broadcast ; with slight protection stand the winter, and are improved rather than injured by frost.
