Polarised light micrograph of vitamin C crystals. Many organic molecules are chiral, which means they exist in several forms that are mirror images of each other. However, in biology usually only one form exists. Such chiral molecules rotate polarized light resulting in this colorful appearance. Vitamin C deficiency leads to scurvy because this vitamin is required for the proper formation of collagen in the body's connective tissue.
