Ireland in Haslingden, Lancashire, England, mixing the ingredients for a traditional Bury black puddings which the company is taking to the Concour du Meilleur Boudin Noir, Europe's most prestigious festival celebrating the black pudding which takes place from 14-16 March 2008 in Normandy, France. R. S. Ireland, was established 50 years ago and employs around 15 people making over 300 tonnes of black pudding each year. Black pudding was a savoury dish made from animal blood, oatmeal, onions, fat, barley and spices.
