Jenin, Palestine. 29 April 2020. Farmers heap piles of wheat and burn them to produce Freekeh in the West Bank village of Ajjah, south of Jenin. While the burnt husk is then stripped away, the young and green wheat kernels get a smoky and nutty flavour. Freekeh, which is a Palestinian staple food stuff, is believed to have been cultivated in the region for over four millennia. Its consumption is also spreading rapidly in different countries outside the Middle East due to increased interest in nutritious ancient grains
