Homemade gravadlax from a rainbow trout, Oncorhynchus mykiss, that was caught from a stocked reservoir using fly fishing tackle. It has been cured and flavoured using salt, black pepper, brown sugar, maple syrup, lemon zest, lime zest, orange zest, coriander and star anise. The picture shows the flesh side and skin side of two rainbow trout fillets on brown greaseproof paper that have been cured and are ready for slicing.
