Olives at different stages of ripeness on the branch of a tree. There are two ways to harvest olives commercially. Historically, the fruit was allowed to drop to the ground and was then gathered by hand. Today, commercial growers use machines that shake the trees but this can bruise both the trees and the fruit. The preferred method is to surround the base of the tree with a net and using a kind of long rotary strimmer gently knock the olives to the ground. Olives are high in anti-oxidants and form an important part of the Mediterranean diet. The oil has a smoking point of approximately 180 degrees. The term Virgin olive oil describes the oil derived from the pressing of the best fruit. The climate in this region is ideal for olive cultivation.
