Salt from the Camargue region of southern France
This salt is made by allowing sea water into shallow lagoons near the town of Aigue-Mortes. The water evaporates during the heat of the summer until there is a layer of salt cake ready to be harvested. Fleur de Sel are the fine flakes of salt which start to crystallise out from the end of June, they are harvested carefully with a long-handled spade, laid on reed beds to drain and then covered to protect them from rain and impurities.
