The dandelion (taraxacum officinale) is usually considered by gardeners to be a stubborn weed, but the leaves are a rich source of vitamins A, C, and K, as well as essential minerals such as iron, calcium, magnesium, and potassium. The name dandelion comes from the French "dent de lion", (lion's tooth) because of the toothed appearance of its leaves.
