In buildings like hotels, hospitals,sanitariums, and private houses, wherefoods are prepared for consumption, andcooking, baking, and washing of dishesis done, more or less grease, oils andfats find their way into the drainagesystem, and it is the experience ofplumbers that the grease congeals onthe inside of the waste pipes until suc-cessive deposits completely fill the boreof the pipe. When the grease is emptiedinto the sink it is in a fluid state, andcarried in suspension by the water; assoon as it is brought into contact witha surface which is cold it will congealand cling to that surface. If, however,before the grease becomes cold, it isstored in a receptacle containing water,the grease will rise to the surface, and,as soon as it becomes cold, will form afilm over the water which can be
