Brazil. Bahia, Sao Salvador, The cooking of Bahia is probably the best thing known about Brazil. Both originated from Africa. You'll see 'baianas de acaraje' everywhere. An acaraje is a for of deep fried bread made from mashed beans from which the skins have been removed. It is fried in dende oil (from a nut found on the dende palm) and the results accompanied by camarao (a small sun dried shrimp), pimenta (a hot pepper sauce), vatapa (a paste made from sun dried shrimps peanuts, cashews, & coconut milk), or salada (usually just diced tomatoes).
