A hardy plant, introduced from and much used in Europe as a substitute for coffee; large quantities of the prepared root are exported to this country. May be used to food advantage and pay a large profit, as its culture is simple, n the fall the roots required to be taken up and cut into small pieces and put where they will dry, requiring the same treat- ment, used for drying apples. The chives are small and not very important members of the onion tribe, quite hardy everywhere. The leaves are slender and appear very early in the spring, and may be shorn several times during the season. They are propagated by divisions of the root. The chives make the very best border for beds in the vegetable garden, and are not only ornamental, bearing pink flowers ana a mass of green leaves, but equal the onion for flavoring soups and salads.
