Traditional olive millstones, Spain. These conical millstones consist of carved granite, and were used in the traditional Spanish method of crushing harvested olives. The millstones were driven by animals such as mules or horses, grinding the olives into a paste prior to pressing to obtain ollive oil. Modern mills mostly use stainless steel metal-toothed grinders, though some still use millstones. These millstones were donated by the Carbonell olive oil producer.
