Dark meat mayindicate inflammation, damage due to accident, or imperfect bleeding, in all ofwhich cases it is best condemned. A dark colour, combined with dryness andharshness, usually indicates that the animal has met its death by some othermeans than the pole-axe or the cartridge. Any bad odour should at once leadto the condemnation of meat, and a knife should be plunged into the fleshyparts, withdrawn and smelt. Marasmus and chronic disease of the internal organs are evidenced bypale, soft, and dropsical flesh, which oilers no firm resistance to the impactingfist.
