It seems to me that we too oftenoverlook the debt we owe to those who struggled in earlier years with smallthings to bring about the better conditions which we are enjoying to-day. It is only a little over fifty years since the manufacture of cheese wasundertaken in this Province, and yet to-day it has attained such proportionsthat it is a big factor in the economic and national life of the country. Last 25 HISTORY OF THE CORNWALL CHEESE AND BUTTER BOARD year, the value of the dairy output of Canada was estimated at approximatelytwo hundred million dollars, and of this upwards of half is to the credit of thegood old Province of Ontario.
