Preparing sheep's heads: a local delicacy in Langa Township, Cape Town, South Africa


They look gruesome, eyes open, teeth grinning, on makeshift tables supported by large oil drums, but sheep's heads, prepared at the roadside and roasted over an open fire, are a local delicacy in Langa Township and a reminder that boiling sheep heads for their brains has been a delicacy in the UK. A woman plucks the wool from one head over a waste oil drum, while her colleague, using an axe on a round wooden block, splits open a head, to extract the brains, which are not eaten.
