BEFOREMILKING THE MILK SITUATION 37 nation of milk with human as with bovinediseases, and jierhaps most important ofall is the protection of young childrenfrom the dirt which causes the fataldiarrhea of summer time, so fatal becausein hot weather the germs multiply so muchmore rapidly than at other seasons; andthe strength of poor babies, taxed by theheat, is not sufficient to resist the strain. The reason for dwelling at such lengthon the importance of healthiness andcleanliness on the farm, is that milkonce contaminated can never be madeclean again; we may strain it andpasteurize it, but in pasteurization allwe have done is to cook the dirt, we havenot removed it, and straining merelyremoves the dirt which is large enough toshow, the dangerous part, the bacteria,are too small to be kept out by anystrainer which can be used. Thereforeunless the first step be clean, subsequentcleanliness and care are of no avail tomake milk good. But equally true is itthat however careful
