Whole raw mackerel fillets that have been used to make homemade gravlax, or gravadlax. They are seen here ready for slicing after having been wrapped in tinfoil to marinade. They have been cured using salt, black pepper, ground allspice, brown sugar, fresh dill, beetroot juice and the zest of a lemon and an orange. The mackerel, Scomber scombrus, was caught on rod and line from a boat in the English Channel. Mackerel are an oily fish that contain Omega 3 fish oils. Dorset England UK GB.
