Co.,Liverpool, in the quantity of fat produced in a year (Fig. 17). The table given later in this chapter shows the milk and fat records of some of the best representatives of the breed. Not only is the percentage of fat in the milk of the Holstein rather less than that in other breeds, but the size of the fat globule is slightly smaller. This fact has been stressed in the matter of choice of milk for infant feeding (Fig. 130).
