Zebra chip disease research. Plant pathologist taking cuttings from a potato plant infected with zebra chip disease. This disease is thought to be caused by a Candidatis sp. bacteria transmitted by the potato psyllid (Bactericera cockerelli). The disease gets its name from the dark stripes that appear on the potato when it is fried. The stripes are due to starch in the potato being converted to sugar and then caramelising on cooking.
