They would have to be eggs of good size, practically uniform in size, and fairly uniform in color. New York prefers white eggs, hence eggs of best quality for the New York market should be white; that does not mean "whitish," but "white," the chalk-white of Leghorn and Minorca eggs. It is not necessary that eggs be marketed within one day, or two or three; they maybe several days (or even a week) old and still have shrunk hardly perceptibly. If they have been kept in a cool place and the weather is cool they will be in the condition of "full, strong-bodied," which characterizes new laid eggs, and will bear the searching test of an electric light all right. That is, when held up to the testing light it will be seen that the shell is practically full, and when given a quick half-turn, a comparatively' slow movement of the yolk indicates that the yolk and white are both of good consistency, not "flu
