Micrographs of fatty food crystals, 1907. At upper left are crystals of pure butter, at upper right are crystals of pure coconut oil, and across bottom are two samples of butter containing 10 percent coconut oil. This research was carried out by British industrial chemist Edward Richards Bolton (1878-1939). In 1902, Edwards became chemist to the East India Products Oil Mills, Hammersmith, London. It was here that he performed the first caustic refining of coconut oil in the UK. His publications included 'Fatty Foods, Their Practical Examination: A Handbook for the Use of Analytical and Technical Chemists' (1913).
