Chitin. Molecular model of chitin, a long-chain polysaccharide polymer with the repeat unit having the formula The atoms are represented by colour-coded spheres: carbon (white), hydrogen (pale purple), oxygen (red) and nitrogen (blue). Two of these repeat units, a derivative of glucose, are shown here, forming an acetylglucosamine dimer. Chitin is the structural element found in the outer skeleton (exoskeleton) of fungi, insects and crustaceans.
