Leo Wallerstein (), German-US chemist. Wallerstein was born in Fuerth, Bavaria, Germany, and arrived in the USA in 1900. In 1902, he and his brother Max Wallerstein () founded Wallerstein Laboratories in New York to provide consultation services to the brewing industry. This included research into fermentation, as well as enzymes used in manufacturing and food industries. After Max died, Leo became president of the company in 1937, and then chairman in 1957. Leo Wallerstein donated to museums and universities, establishing science grants and working with the Federation of Jewish Philanthropies.
