CHINESE, or CELERY CABBAGE This vegetable is called Pe-Tsai, or Cut Cabbage, by the Chinese garden- ers, and is beginning to attract at- tention in America. It does not form a cabbagehead, but when grown to its full size resembles the Cos Lettuce, and the outer leaves may be used during its growth.
