More precisely, about 87 per cent, of milk is water; the remaining 13 per cent, consists of solid substances, such as albumin, sugar, fat and mother's milk. Does the Milk of All Cows Have the Same Amount of Water?—No. Holstein cows usually yield a more watery milk than Jerseys or Guernseys; otherwise the milk of Holstein cows is quite as wholesome and nutritious as the others.
